Here are a few of our favorite ways to pair what's in season with Kauboi Ranch's grass-fed and finished beef.

Sweet Corn + Ribeye
Nothing says summer quite like corn picked that morning.
The marbling and bold flavor of a grilled ribeye pair naturally with buttered corn on the cob, a little sea salt, and cracked pepper. Add a simple green salad and you've got a meal that doesn't need much else.
Billy's Tip: Grill the corn right alongside your steak. A little char brings out its natural sweetness.

Heirloom Tomatoes + Flat Iron Steak
By late July, Oregon tomatoes are finally showing off. Slice them thick, drizzle with olive oil, sprinkle with flaky sea salt and fresh basil, and serve alongside a grilled Flat Iron Steak, the bright acidity of the tomatoes balances the rich flavor of grass-fed beef beautifully.
One of our favorite ways to enjoy them this time of year is a simple marinated tomato salad that comes together in a few minutes while the steak rests.
Marinated Summer Tomato Salad
Ingredients
- 3–4 ripe heirloom tomatoes, sliced or wedged
- ½ sweet onion, thinly sliced
- ¼ cup fresh parsley, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon coarse sea salt
- Fresh cracked black pepper
Directions Combine the tomatoes, onion, and parsley in a serving bowl. Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss gently and let sit for 20–30 minutes so the flavors come together.
Serve alongside a grilled Flat Iron Steak with warm crusty bread to soak up the tomato juices.
Simple. Fresh. Summer on a plate. It's the kind of meal that reminds us the best ingredients don't need much, just quality beef, ripe produce, and good company around the table.
Zucchini & Summer Squash + Tri-Tip
Zucchini seems to multiply overnight this time of year, which is just fine by us, it's one of the easiest vegetables to throw on the grill. Brush with olive oil, season simply, and grill until lightly charred. Serve alongside sliced Tri-Tip for a weeknight dinner that still feels like it celebrates the season.
Peaches + Burgers
Fresh Oregon peaches might not be the first thing you think of for burgers, but don't overlook them. Grilled peaches add just enough sweetness to balance smoky beef.
